Weeknights are always hectic in my house. I always feel guilty when we have too much takeout in a week, but with our schedule jammed packed, it has happened more than I’s like to admit.
We eat a lot of chicken and over the years I have mastered a few tried and true recipes that I can get on the table quickly, that my picky eaters will actually enjoy.
This post is about easy chicken dinners every busy person should know.
My first go to is a butter chicken. I always have these ingredients stocked, so it’s almost mindless to put together. I’m including a recipe for chicken breast and chicken thighs and I’ve interchanged the ingredients depending if I want a low carb version that night or not.
Please note that the ingredients can be swapped boneless or bone-in chicken.I’m using the first two recipes as an example. These are weeknight dinners, so just use what you have. The cook time may vary, but a meat thermometer can help you avoid any late night emergency bathroom visits, if you know what I mean.
